Overnight Production Commis Chef 

Location: Tuga Pastries, Alexandria

As a member of the Overnight production team, you will be responsible for assisting the shift supervisor with the correct execution of all baked and raw production for both retail and wholesale products. You will follow Tuga recipes and methods to ensure consistent production of all pastry products.

Key Responsibilities

  • Follow guidance from CDPs and Senior leaders to ensure  that all aspects of production, from recipe reading, execution and storing are completed in line with Tuga Pastry standards.
  • Follow all reasonable directions given to you by your shift supervisor or other senior leaders within Tuga pastries.
  • Mixing various ingredients to create fillings for cakes and tarts
  • Decorating cakes with glazes, icings, buttercream and edible toppings,to ensure a beautiful presentation in line with Tuga style guidelines
  • Ensure that all items prepared and/or baked are recorded in a manufacturing and/or wastage format
  • Ensure that all prepped items are dated, labeled and stored correctly
  • Ensure that stock is rotated properly
  • Ensure all health & safety standards are met whilst working in the bakery
  • Ensure all equipment is cleaned and sanitized and ready for the next shift
  • Ensure that items are correctly packed and labeled for the right store/client
  • Follow all system reports for production volumes, inventory lists and stock
  • Maintain clear communication with the day team through use of handover sheets, daily reporting and group chats.

Essential Knowledge and Experience

  • Minimum 1 year of comparable work experience
  • Genuine interest in food
  • A can do attitude and willingness to work as part of a team, learn and develop your skills as the company continues to grow.
  • Available to work overnight, between the hours of 10pm and 6am, 5 days a week (For Full Time)

We are looking for an experienced all-rounder who enjoys being part of a fun and enthusiastic team. This person will need to be capable of serving tables, taking orders and communicating with customers and the team.


  • Minimum 1 years experience in a similar position
  • Ability to work with efficiency and speed whilst maintaining quality
  • Enthusiasm with all tasks and the ability to work with confidence under pressure
  • A willingness to work with the team as well as unsupervised
  • Applicants must be flexible and be available to work a variety of day and weekend shifts
  • At least 1 weekend day required

Qualifications & experience

  • Ideally will have some experience in a similar role.

  • Have good knowledge in preparing, mixing, shaping and baking a variety of bread products including sourdoughs
  • Ability to work independently
  • Have great attention to detail
  • Have excellent time management and communication skills
  • Be flexible with start and finish times and able to work weekends when needed
  • Be able to start immediately

Tasks & Responsibilities

  • Taking care of the guest coffee experience from hello to see you again
  • Leading coffee standards and training throughout the business
  • Responsible for the set-up and maintenance of the coffee and drinks section across all locations
  • Ensure excellent and consistent presentation of drinks and food in retail
  • Be involved with the opening of new venues
  • Support the Group Venue Manager as 2IC with hiring, training and leading the front of house teams
  • Initiating and executing growth strategies to increase top line sales
